I hold my hands up… visually, my baking doesn’t always look amazing (see images) but baking is something that I enjoy, when I have the time to dedicate. I much prefer to bake over cooking, mainly because I can take my time and I’m not being pressured to feed a hungry family.
Baking is one of those things you’re forced into during school in Food Technology and for some it can be seen to be a bit of a doss lesson. However, if you pay close attention, you’ll find that these lessons are equipping you with valuable life skills both in theory and practice. I’ll never forget my lessons baking scones and rock cakes!
My favourite treat to bake is a lemon drizzle cake. It doesn’t require much effort, but the results are so worth it! I’ve got a loaf tin which I use, and this is a perfect size, allowing my hubby and I two or three slices each (not usually in one sitting!). In fact, the loaf tin is so useful, that’s how I made Logan’s first birthday cake. I couldn’t find my circular tins, so a last-minute change of plan, meant that I was able to make-shift a ‘1’ for him. The overall look of the cake is my favourite part and I have a variety of different cutting tools and shape cutters which can be a lot of fun to play around with. In this instance, I really wasn’t prepared for the shape of the cake and my icing struggled to completely cover the ‘1’. Therefore, I had to try and improvise with what I had, cutting out flowers to hide the patches. It kind of worked out okay though as my theme was ‘In the Night Garden’, so the flowers were on trend. Still, the taste of the cake is what really mattered, and it was received very well by my family at the birthday party.
The cake itself was lemon flavoured and was covered in a vanilla buttercream (pre-made by Betty Crocker!). I highly recommend these products if you are short on time or want a quick fix and they are affordable too. They are available in a variety of flavours and products and if you’re sneaky, no one would know you used them!
